Menu Plan – The Stressed Out Edition!

I am getting my menu up late today, not because I got home from my trip after midnight last night, but because this morning I found out that my credit card number has been stolen, the DMV has still not mailed my tags, and my computer is infected with a virus. After I post this I am going to make a large batch of fudge to get me through the rest of the day!  I have decided to go with old standbys for most of my recipes this week, because I have had enough surprises to last me a couple of days.

Monday – Upon returning home I found lots of veggies and strawberries that need to be used up, so I am going to make Vegetable Lasagna and Strawberry Spinach Salad. I had this Lasagna at my Dad’s this weekend and it was so incredibly good that I am excited to share it with my husband and kids tonight. It has lots of finely chopped vegetables, cheese, and is smothered in a cheesy white sauce.
Tuesday – Grilled Chicken, Basmati Rice, and  Glazed Carrots.

Wednesday – Use leftover chicken, rice and carrots to make Chicken and Rice Soup.

Thursday –  YOYO

Friday – Use the last of the leftover chicken to make Pasta Salad.

Saturday – Grilled Steak, Roasted Sweet and Gold Potatoes, and Sauteed Asparagus with Garlic.

Sunday –  Use leftover steak in Southwest Steak Salad. I am going to experiment with this and will let your know if it was a success.

So how do you react to stress? Chocolate? Comfort Foods? Or are your like my sister who exercises when under stress? I hope you are all having an uneventful day!

    Ohhh, big hugs for you. So many things to deal with at once.

    Someone hacked into our bank account a couple of months ago. And I have had my credit card number stolen a couple of times.

    I am a non-planner when it comes to the menu. I have stuff in the cabinet and make whatever I can that fits in my schedule.

    Sounds like you had a perfectly rotten day 🙁 BTW, I believe that there are not any calories in fudge when used properly, and I think you did use it as intended. I hope the rest of the week goes much better for you 🙂

    Well, unfortunately it's not "exercise," but I do get physical…when I am angry or stressed I can be very productive.

    Saturday, I mowed our very large back yard…tears streaming down my face at one point, but at least I wasn't taking it out on my fam!

    Other times, it can be tackling a messy kitchen or frantically ironing out whatever the stress factor is: like calling a credit card company ASAP!

    And making food, which, of course, involves consuming said food, and we have come full circle from exercise to eating chocolate!

    Blessings to you for a week ahead of enjoying your planned meals and getting life straightened out! You know, He provides these "tests" in life to see how we'll handle it!

    YIKES! What a day! I'm not sure fudge would be enough, but it's a good start. I crave chocolate when I'm stressed, but otherwise can do without it, so when I'm eating or asking for chocolate, it's a pretty good indicator things are not going well. Hopefully your day has improved somewhat since you posted.

    And thanks for the shout-out on my menu planning "technique." I just had one too many weeks where I had to shift the menu around before I finally figured out not to assign days. I pretty much pick what I'm going to do based on what I have that's most perishable. The eating before planning trick was just serendipity, nothing I thought of, but it works.

    Oh, why do those things always happen all at once? So sorry, and I hope it all gets ironed out quickly. I would love to hear your solutions to the virus, because I've been experimenting with different anti-virus software and some of it really slows things down. I'm tempted to go without, but don't want to get a virus. Ah, modern life.

    Good luck with those challenges, and I would definitely love to get that delicious-sounding lasagna recipe. It sounds very different.

    I don't deal with stress very well, and depending on my level of overwhelm and the time of day, I will either take a walk or pour a glass of wine. I guess it's better than what I did in my 20s, which was to reach for a cigarette.

    Thank you! I have had a large piece of fudge, and even though it had not completely set, it hit the spot.

    "I'm Losing It Here" (Link on my side bar) has a unique menu planning technique that I keep meaning to reference. She plans her menu after she has eaten, so she isn't planning hungry and from her menu makes her grocery list. She also does not assign meals to a particular day. She has a list of meals she can make with the items on hand and then can pick a meal to fit her schedule. I think this is a great way to plan and one that would be easier to use for non-planners.

    Your menu sounds good to me. I really need to start planning our menus–I know I'll save money and time doing it–I just need to stop thinking about it and do it. I need to find a better way to react to stress–I usually just keep it all in then I end up with a headache.
    I'm sorry to hear about your stolen credit card, the DMV problem and the computer virus. I would probably be in a corner crying right about now!!!
    Here's hoping the rest of your week is much better.

Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
