How to Create a Menu Plan - Tips for creating a menu plan

This week’s menu is filled with easy recipes because I will be out of town Thursday through Sunday. I am making  casseroles at the beginning of the week, so they can eat the leftovers if necessary. And for the end of the week, I have chosen recipes that my kids can easily make, though my husband may override my plans and decide to grill every night and make ice-cream each night for dessert. It has happened before. The first time I went out of town my daughter called to complain because “Dad served grilled meat with every. single. meal.” It is so nice to come home to kids who are craving vegetables.

I have a printable weekly menu plan and shopping list that you can download to make organizing your meal plan and grocery shopping a little easier.

Monday – Rapidly Roasted Herb Crusted Chicken and Vegetables. After I remove the leftover meat, I will freeze the bones to make chicken broth in a slow cooker when I get home from my trip.

Tuesday – Use leftover chicken in Southwest Frittata with Chicken. Serve with a garden salad.

Wednesday – Use leftover chicken in Chicken and Broccoli Alfredo Lasagna. Serve with a garden salad.

Thursday – Easy Homemade Spaghetti Sauce over Rotini noodles and a garden salad.

Friday – Tacos (using homemade taco seasoning), Mexican Rice, and Refried Beans.

Saturday – Pizza using gluten-free pizza dough and my easy pizza sauce. Serve with a garden salad.

Sunday – Use leftover taco meat to make Taco Salad.
