Menu Plan –Week of September 20th

On Thursday, two of my children and I came down with the stomach flu that my husband and oldest son had over labor day weekend. It was quite debilitating! I would like to thank Rebecca from Turned Loose for coming to my rescue and sharing a post on Friday. If you haven’t had a chance yet, you will want to visit her blog.

I was starving on Saturday, but I knew better than to take a bite, so I channeled my frustration and hunger into coming up with new recipes. I came up with ideas for 22 new meals, so I can’t wait to get well and start experimenting. In the meantime we are going to play it safe

Monday – ? Don’t know if we will feel like eating yet. Perhaps just oatmeal.

Tuesday – Chicken and Rice Soup

Wednesday – Borscht and Garden Salad

Thursday – Pasta Salad

Friday – Chicken and Garlic Pizza and Garden Salad

Saturday – Grilled Steak, Roasted Potatoes, Honey Glazed Carrots

Sunday – Use leftover steak in a stir fry

    My son is just getting over a stomach bug also. Hope you and yours feel better!
    We're also using leftover steak (that we had tonight) in a stirfry later this week.

    I am thinking about trying borscht this week. I've never had it, but I love all of the ingredients so it should be a hit. 🙂

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
