Mocha Fudge No Bake Cookies

Mocha Fudge No-Bake Cookies Recipe

 

If you are a fan of traditional no bake cookies and a lover of coffee, or even if  you have never had them before this recipe is a delicious twist on an old favorite. Combining the flavors of chocolate, peanut butter, and coffee with the texture of oatmeal creates yummy no bake cookie that takes less than 10 minutes to whip up without heating up your entire kitchen. The coffee flavor takes my childhood favorite into grown up territory-as in hide these cookies from the kids good.   Try substituting vanilla extract  for hazelnut and coffee extract for more of a gourmet coffee flavored punch.

Mocha Fudge No Bake Cookies

Ingredients:

  • 1/2 cup butter
  • 2 cups sugar
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 1/2 cup creamy peanut butter
  • 3 1/2 cups quick cook oat
  • 2 tsps. vanilla
  • 1-2 tsp. instant  coffee granules

Directions:

These cook up quickly, before starting lay out waxed paper or foil to set your cookies on.

In a large saucepan bring  butter, sugar, milk, cocoa powder to a boil.

Let mixture boil for 1 full minute.

Remove from heat and stir in peanut butter, vanilla, and instant coffee granules until peanut butter is melted and all combined.

Stir in oatmeal thoroughly.
