Pesto Green Beans with Sliced Almonds

A quick and easy recipe for Pesto Green Beans with Sliced Almonds. Spice up your green beans by adding pesto and almonds next time you cook green beans.

Do you ever feel bored or burnt out when trying to decide on a vegetable to prepare with your meals? Vegetables are a valuable part of our daily diet, so don’t avoid them or settle on the same ways to prepare them day in and day out. While green beans are technically a fruit, they are more commonly categorized as a vegetable and are an easy way to provide a healthy dose of fiber and vitamin C to your meals. By following a few easy to follow steps, this recipe adds a ton of flavor and a little crunch to fresh green beans.

Pesto Green Beans with Sliced Almonds

Ingredients:

  • 3 cups of fresh green beans
  • 2 tablespoons of pesto
  • ½ tablespoon olive oil
  • 1/3 cup sliced almonds

1. Rinse the green beans and trim off the tail of each end.

2. Bring a small to medium pot of water to a boil and use a basket steamer to steam the green beans for 5 minutes. Remove from heat.

3. In a small skillet, add the olive oil and toss the green beans over medium heat for 3 minutes.

4. Add the pesto and toss again so the green beans are completely covered. Heat for 3 more minutes and add the sliced almonds. Toss again and completely mix the almonds into the green beans and pesto. Remove from heat and serve.
