This evening I am sharing my recipe for Russian Borscht at $5 Dinners. Borscht is the ultimate “cellar recipe”. It makes use of root vegetables that keep well in cold storage. Even though I haven’t been doing much gardening lately, I am continuing to eat from the garden thanks to the many root vegetables that I grew. Not a gardener? You can still enjoy organic root vegetables at great prices this time of year!

    Hi Alea! I love root vegetables of every kind and you certainly have a wonderful assortment here! My favorite is really roasted root veggies with bacon. I can't get enough of turnips, parsnips, rutabagas and carrots. I could do without potatoes even with that mixture! Winter makes me happy as long as I can have them. Weird huh? My other favorite is greens. I was a strange child 😉 hugs! Alex

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
