Black Bean Chocolate Pudding Recipe - Here is a recipe for a healthier chocolate pudding using black beans, almond milk, and maple syrup.

Chocolate and black beans may seem like an odd pair, but let me fill you in on a little secret. With just a few more ingredients you can make chocolate pudding that has half the ingredients of the store bought stuff and is even a little healthier.

How can chocolate pudding be healthy? A Snack Pack of chocolate pudding contains trans fats, high fructose corn syrup, and artificial colors. By making your own Black Bean Chocolate Pudding you can satisfy your sweet tooth without any of those ingredients. This recipe is naturally sweetened and beans are a great source of protein.

Whether you’re looking for a healthier dessert option or you have a little one with an aversion to beans, this recipe is a must try. You may never look at black beans the same!

Black Bean Chocolate Pudding

Ingredients for black bean chocolate pudding

Ingredients:

  • 1 can reduced sodium black beans
  • 1/3 cup unsweetened almond or soy milk
  • 2 tablespoons cocoa powder
  • 2 tablespoons pure maple syrup
  • 2 teaspoons coconut oil, melted
  • 1 individual packet of stevia
  • Optional: bananas

Instructions:

1. Rinse and drain the beans and pour them into a high power blender or food processor.

2. Add the remaining ingredients and puree until smooth.

    Ok, I made it for my harshest critic. Needs slight tweaking for our household, its a little too dark a chocolate flavor for her, so we’ll likely use actual cream next time instead of oat creamer. Otherwise, she loves it and just pointed at me and accused me of witchcraft!
