Chicken Parmesan Bites

Chicken Parmesan Bites- These homemade chicken nuggets are a cinch to make. A Parmesan cheese and Italian breadcrumb coating gives them the perfect crunch!

My kids will eat anything in chicken nugget form! Since I am not a short order cook and only make 1 thing for the whole family, I needed some kid friendly and grown up friendly homemade chicken nuggets. One of my favorite recipes is Chicken Parmesan but it can be a bit involved and I don’t always have the time.  Combine the two- nuggets and chicken Parmesan and you have delicious Chicken Parmesan Bites that everyone will devour. The combination of bread crumbs and Parmesan gives a lovely crunch, even though they are baked and not fried!

Chicken Parmesan Bites

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup Italian breadcrumbs
  • 1 tsp. parsley
  • 1 tsp. garlic salt
  • 1/2 tsp. pepper
  • 1 egg
  • 2 T. milk
  • 1/2 cup flour
  • marinara for dipping

Directions:

  1. Preheat oven to 400 degrees.
  2. Cut chicken breasts into small bite sized pieces, approximately 1″ x 1″.
  3. In a shallow dish combine bread crumbs, Parmesan cheese, parsley, garlic salt, and pepper.
  4. In a second dish whisk together egg and milk.
  5. Add flour to a third shallow dish.Chicken Parmesan Bites
  6. Coat chicken pieces in the following order: Flour, milk and egg mixture, then the breadcrumb mixture.Chicken Parmesan Bites
  7. Place on a baking sheet lined with aluminum foil or a silpat mat.Chicken Parmesan Bites
  8. Bake for 20 minutes or until golden brown.
  9. Serve with marinara to finish off the Chicken Parmesan flavor!
