Chicken Tortilla Cups

This Chicken Tortilla Cups Recipe is made in a cupcake pan using flour tortillas. These tasty chicken tortilla cups are a delicious appetizer or main dish.

Here is another easy, quick and delicious family food friendly idea. Around our house we love food with Mexican flair. So, I took soft flour tortillas stuffed the into a cupcake dish and created something my boys called, AWESOME! Now that’s a ringing endorsement if ever there was one.

Chicken Tortilla Cups Recipe

Ingredients:

  • 6 chicken thighs with drumsticks
  • 1 package of medium size tortilla shells (10 count)
  • 1 package Ortega Taco Seasoning
  • 1 bottle of mild taco sauce
  • 1 bottle of salsa
  • 2 tomatillo, diced
  • 1 medium size onion, diced
  • 1 medium size green pepper, diced
  • 1 medium size red pepper, diced
  • 3-4 grape tomato, diced
  • 1 package of Kraft Mexican Shredded Cheese
  • 1 avocado
  • 1 package of sour cream, medium

Directions:

1. Rinse chicken and pat dry.

2. Place the chicken in a large bowl. Brush both sides of chicken with olive oil.

3. Next, open a package of Ortega Taco Mix and coat the chicken completely with taco seasoning.

4. Arrange chicken pieces in a large cast iron skillet.

5. Place in a 350 degree pre-heated oven and bake for an hour or until juices run clear.

How to Prepare Tortillas:

6. Take medium size flout tortillas and brush both sides with olive oil. Then place prepared tortillas into a large cupcake pan one by one.

7. Once the chicken is finished and is cool enough to safely handle, remove meat and chop. Set aside.

How to Assemble:

8. Pour a small amount of taco sauce into each tortilla cup, then spoon in 2 tablespoons of chopped chicken, add cilantro, diced tomato, tomatillo, pepper and onion mixture, then top with shredded cheese.

9. Bake in a 350 degree oven for 15-18
