Pumpkin, Blueberry, and Date Smoothie

Pumpkin, Blueberry, and Date Smoothies- Fall is the perfect time to whip up this delicious smoothie for a healthy dose of pumpkin, blueberries, and dates.

In an attempt to live and eat better we try a lot of things. We exercise, sweat, and experience pain. The likes of which can be purely torturous. We even subject ourselves to odd foods and ignore cravings the body craves like an addiction. We’ll even have a measure of success, and we feel as if we won the state lottery. Things can unravel quickly, can’t they? The pounds we lost are quickly replaced two or threefold.

In my many years walking the earth one regimen has remained constant: the smoothie.  Yes, the smoothie has been around since those hippy-dippy days of free love wheatgrass and coffee grounds enemas (cringe factor overdose). I like smoothies because you can mix and match and play around with what is both healthy and what you happen to be in the mood for at any given time.

Pumpkin, Blueberry, and Date Smoothie

Today’s smoothie is brought to you by the letter P. You guessed it, the great pumpkin. No, not the Great Pumpkin of Charles Schutz’s Peanuts fame but the one you pick up at your local farmer’s market or extricate from the innards of a store bought can. I like the taste of pumpkin and when they are not plied with tons of cream, butter, and brown sugar they’re a great nutritional source and chock full of antioxidants. So in the spirit of sharing I raise a glass of the Pumpkin, Blueberry, & Smoothie. Drink and be happy!

Below is what you will need to whip up this tasty feel good sunshine in a glass…

Pumpkin, Blueberry and Date Smoothie ingredients

Ingredients:

  • 1/2 cup of pumpkin puree
  • 1/4 cup of frozen blueberries
  • 3 Deglet Noor or Honey Dates, find them in the dried fruit section
  • 1 cup of almond milk, chilled
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of pure vanilla extract

Pumpkin, Blueberry and Date Smoothie finished recipe

Directions:

  1. Using a blender, add pumpkin puree, frozen blueberries, and dates. Pulse a few times.
  2. In a small bowl combine almond milk, vanilla, and cinnamon. Stir together.
  3. Pour almond milk mixture into the blender and pulse all ingredients together.
  4. Pour into a glass.
  5. Serve.

Ingredients
