There is nothing better to me than sitting down with a big bowl of baby carrots and homemade ranch dip. I have to say, it’s my all time favorite snack and has been since I was in my first trimester of pregnancy with my daughter. I just craved carrots like nothing else! Carrots are something I also add to my juicing and they add a great amount of sweetness to recipes as well. How to Buy and Store Carrots

You have probably seen the typical orange carrot, but did you know that carrots actually come in a rainbow of colors? I was ecstatic when I first saw the purple carrots several years ago. You can usually find these kinds of carrots in natural foods stores like co-ops or chains such as Whole Foods. They don’t really taste much different I have found, but these deep colored root vegetables have lots of nutrients. By the way, “baby carrots” are nothing more than regular carrots that have been cut by a machine, so you can make them much cheaper at home.

If you find that you have a lot of carrots on hand, one way to store them is in the bag they came in. You can also make them last longer by cutting off the green parts and covering them completely in water. Just make sure to change out the water every 3-4 days and store them in the fridge. This will keep them nice and crisp.
