Broiled Zucchini Pizza Bites

This broiled zucchini pizza bites recipe is a delicious way to use up your zucchini from the garden!

Quick and Easy Broiled Zucchini Pizza Bites Recipe - These tasty zucchini pizza bites use just a few ingredients and can be cooked in less than 15 minutes.

My kids will eat anything if I make a pizza flavored version of it. And I’ll be honest, I have milked this weakness of my kids to get them to eat more vegetables. I have even used it to get them to eat vegetables as an afternoon snack in the form of Zucchini Pizza Bites.

These zucchini pizza bites make a delicious snack or appetizer. You can double, triple, or quadruple the recipe for a large party. The broiled zucchini pizza bites come together so quickly that they also make an easy lunch or quick dinner on a busy night.

Prep Ahead Tip: You can slice the zucchinis a day or two in advance. Store the sliced zucchini pieces in a seal-able plastic bag or a lidded container.

While this recipe calls for pizza sauce, you can always use leftover spaghetti sauce if you have some on hand.

Broiled Zucchini Pizza Bites Recipe

Ingredients:

  • 2 large zucchini, cut into 1/4-inch thick rounds
  • 1 – 2 tablespoons olive oil
  • Pinch of Salt and Pepper
  • 1/4 cup pizza sauce (Easy Pizza Sauce Recipe)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni pieces (optional)
  • Italian seasoning(How to make Italian Seasoning Mix)

Directions:

  1. Preheat the oven to broil
  2. Brush both sides of zucchini rounds lightly with olive oil.
  3. Sprinkle the zucchini rounds with salt and pepper.
  4. Broil the zucchini rounds for 2 minutes on each side.
  5. Place cooked zucchini rounds on a large lined baking sheet. Top the zucchini with a small amount of sauce, cheese and pepperoni pieces. (Optional).
  6. Broil on low for 1-3 minutes, or until cheese is melted.
  7. Sprinkle with Italian seasoning and serve warm.

  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni pieces optional

Instructions

  • Preheat the oven to broil.
  • Brush both sides of zucchini rounds lightly with olive oil.
  • Sprinkle the zucchini rounds with salt and pepper.
  • Broil the zucchini rounds for 2 minutes on each side.
  • Place cooked zucchini rounds on a large lined baking sheet. Top the zucchini with a small amount of spaghetti sauce, cheese and pepperoni pieces.
  • Broil on low for 1-3 minutes, or until cheese is melted.
