We all fell in love with Chipotle’s Cilantro Lime Rice, but rice has so many carbs! So we came up with a low-carb substitute using cauliflower rice so we can enjoy our favorite rice dish without the guilt.

Turn boring cauliflower rice into a flavor explosion when you combine it with the fresh and bright flavors of cilantro and lime for this Cilantro Lime Cauliflower Rice Recipe. It makes the perfect side dish for Taco Tuesday.

Whether you follow a paleo diet, keto diet, Whole 30, or are just watching your carbs, you don’t have to settle for ho-hum flavor in your quest for low carb dishes. Use fresh herbs to kick your flavors up a notch without adding any additional carbohydrates to your meal.

How to Make Cilantro Lime Cauliflower Rice

You can start with fresh or frozen cauliflower rice that has been thawed. Here are 4 ways to make cauliflower rice from a head of cauliflower.

Once you have riced your cauliflower, you will cook this dish much like you would traditional Cilantro Lime Rice, only since you don’t have to cook your rice first, this dish will come together much faster.

You simply saute the cauliflower rice and cilantro in olive oil for 5 minutes. Then add the lime juice and saute until tender. Season with salt and pepper to taste.  In 10 minutes you have a delicious variation on Chipotle’s rice.

Cilantro Lime Cauliflower Rice Recipe

Makes 6 servings

Ingredients:

  • 1 tablespoon olive oil
  • 3 cups cauliflower rice (How to Rice Cauliflower)
  • ½ cup chopped cilantro
  • Juice of one lime
  • Salt and pepper, to taste

Instructions:

  1. Heat oil in a large skillet over medium heat.
  2. Wash and rough chop cilantro.cilantro lime rice chopped cilantro
  3. Add the cauliflower and cilantro to the pan. Saute the cauliflower rice and the cilantro for 4-5 minutes.cauliflower rice with cilantro
  4. Add the lime juice to the rice, tossing to thoroughly coat the rice. Cook for an additional 3-4 minutes, or until tender.
