Muffins are one of the easiest breakfasts. They are portable and delicious and easy to make. One thing muffins sometimes lack, though, is nutrition. Often, they are nothing more than a frosting-less cupcake. That is where these healthier versions of muffins come into play. They are packed with vegetables and nutritious ingredients but are still extremely kid-friendly. Check out these delicious healthy muffin recipes.

If you have an abundance of zucchini this season, these Chai Spiced Zucchini Muffins from Premeditated Leftovers are a great way to use it up.

Avocado Banana Chocolate Chip Muffins from My Kids Lick the Bowl have got to be the best healthy muffins out there and full of good for you nutrients. I can’t wait to make these.

These Flaxseed Date Banana Muffins from In The Fields sound super good. They are naturally sweetened with the dates and bananas. Since they contain flax seeds, they are full of other nutrients like fiber and good fats. You may need to scroll down about half-way through the page to get to them, but this recipe looks worth it for heartiness.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
