This Jalapeño Popper Macaroni and Cheese Recipe takes mac and cheese to a whole new level!

Jalapeno popper macaroni and cheese plated with casserole

This mac and cheese recipe has all our favorite Jalapeno popper flavors in a delicious baked casserole dish. Jalapenos, bacon, Monterey Jack cheese, cream cheese…yum! This is a tasty twist on traditional baked macaroni and cheese recipes. You can serve this as a main dish with a side salad or this can be an epic side dish for a dinner party.

Our Jalapeño Popper Macaroni and Cheese recipe calls for both croutons and cooked bacon. You can make both of these items at the same time in the oven while you are boiling the pasta if you wish. Here is how to make croutons and here is how to bake bacon in the oven. The croutons and a crunchy bite that is a nice counterbalance to the soft and creamy mac and cheese, but you can skip them if you wish or replace them with a thin layer of bread crumbs.

We use canned jalapenos in this dish. You can use mild, medium, or hot peppers depending on your family’s preference. We garnish our bacon jalapeno mac and cheese with fresh jalapeno pepper slices. If you want to reduce the heat, deseed the peppers. If you like it hot, leave the seeds in.

The richness of the sauce contrasts wonderfully with the jalapeno and cruncb of bacon. I substitited barely cooked broccoli for the pasta-heaven!

Welcome. I'm Alea!

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
