Making Chili with Leftovers and Repurposing Leftover Chili

 Chili Pie is a delicious way to repurpose leftover chili!

Making Chili with Leftovers:

I have found that I can get my kids to eat just about anything if I season it with cumin, so that makes chili the perfect dinner to use up the leftover bits in the fridge. I have been know to add leftover spaghetti sauce, leftover taco meat, extra veggies, and leftover rice to chili.  I think the Italian and Mexican flavors of leftovers add more depth to a traditional chili. I also add whatever beans that need to be used up from baked beans, to garbanzo beans and everything in between.  Here are a few of my chili recipes:

Repurpose Leftover Chili with these Recipes:

I often make a large pot of chili and my family doesn’t want to eat chili for breakfast, lunch, and dinner until it is gone, so I use the chili as the base for a new recipe. Chili also freezes well. I like to freeze to freeze chili and then use it in one of the below recipes.

Make Chili Dogs

Use chili as a dip with chips.

Use it as a condiment over scrambled eggs.

    I make polenta for a base in a casserole then I spread the chili, then I top with cheese or salsa

    Great ideas! I’ve been known to save the last little bit of chili (even if it’s just a tablespoon). I scramble it with my eggs in the morning, add a little cheese and wrap it in a tortilla. Breakfast Burrito!

    I like spreading leftover chili over pizza dough, topping it with thinly sliced hot dogs (it’s supposed to be like pepperoni) and then covering it with shredded cheese. I bake it til the cheese is melty and good. My kids love it.

    Alea,

    I like the the chili recipe as well as your left over pie. I too make something like these but not exact recipe, sure I will try this.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
