Menu Plan – The "Preparing for the First Freeze" Edition

The high today was 95 degrees, but Wednesday night it is going to dip down to 25 degrees! I was too busy today making preparations for our first freeze to make Split Pea Soup, so I will make it on Thursday when it will be too cold to play outside. We will be continuing to prepare through Wednesday, so I have planned easy meals.

Monday – Tomato Black Bean Barley Soup and Salad.

Tuesday – Tacos, Black Beans, and Mexican Fried Rice

Wednesday – Salad, and used canned tomato sauce to make spaghetti with this recipe: Easy Homemade Spaghetti Sauce

Thursday – Use frozen ham bone to make Crock Pot Split Pea Soup and Salad

Friday – Use some leftover taco meat and beans in Taco Salad

Saturday – Use leftover taco meat, black beans, Mexican fried rice and tomato sauce in Chili, Gluten Free Corn Bread, and salad

Sunday – Swedish Meatballs, Brown Rice, and Peas with Green Onions and Basil

There are lots of salads on the menu, hopefully they will continue to come from my garden. I plan to cover my lettuces, like I did this spring, and hope they survive.

    Alea,
    It's so cold here too –it's 55 but for some reason it feels like 30. Chili sounds wonderful. What do you have to do to get ready for a freeze? Let us know –

    Yum! Chili is the perfect thing when the weather dips. Your post got me thinking about Swedish meatballs. I haven't had any since last Christmas. Hope your lettuce doesn't freeze!

    Wow, 25 degrees already!! They're calling for 45 here in the foothills and I thought that was cold! 🙂 Brrr!! Oh, but I so love the colder weather. 🙂 Not a summer person. Chili definitely needed to be on your menu this week. It's on ours too!!

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
