How to Create a Menu Plan - Tips for creating a menu plan

My garden is doing extremely well, maybe a little too well. I have declared a salad week, so we can make a dent in all of the greens. Depending on the weather and time available I will either Batch Grill or Batch Broil Chicken on Monday and then combine the chicken with ingredients from the garden to make a salad with different flavors each night. I will pick up a few produce items to use in our salads, like mangoes and limes which are currently on sale, but most of the ingredients for this week’s menu are either on hand or still in the garden.

Monday – Taco Salad

Tuesday – Asian Chicken Salad

Wednesday – Chicken and Radish Salad with Radish Leaf Soup

Thursday – Apple Walnut Salad

Friday – Honey Mustard Salmon Salad

Saturday – Chicken and Mango Salad with Cilantro Lime Dressing

Sunday – Build Your Own Salad Buffet

    What a great list of salads! I’m jealous of your garden already having enough greens to have salads every night. Sounds like a great week of healthy eating! I also have taco salad scheduled for this week as well. Made a big pot of pinto beans this weekend, so we’ll be ending on it for a while. Have a great week!

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
