No-Bake Pumpkin Cookies

This No-Bake Pumpkin Cookies recipe is a delicious seasonal take on a classic favorite. Uses pumpkin puree, pumpkin pie spice, a nut butter, and quick oats.

No-Bake Pumpkin Cookies are a simple and tasty treat with your favorite fall flavor and you don’t even have to heat up the kitchen!

Easy No-bake pumpkin cookies recipe for fall parties.

I love how quick and easy it is to make no-bake cookies and I love all things pumpkin, especially pumpkin cookies, so this recipe is a combination of the best of both cookies! The ease of no-bake cookies and the flavor of pumpkin pie spice and pumpkin.

No-Bake Pumpkin Cookies Recipe

Yields: 1 1/2 dozen cookies

Ingredients:

  • 1/2 cup pumpkin purée (how to make pumpkin puree)
  • 1/2 cup (1 stick) butter
  • 1/4 cup smooth almond butter or peanut butter
  • 1/4 cup milk
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 cups quick oats
  • 1 teaspoon pumpkin pie spice (how to make pumpkin pie spice)
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Directions:

1.   Line a cookie sheet with wax or parchment paper and set aside.
2.   In a medium saucepan, add the pumpkin purée, butter, peanut butter, milk, and sugars.
3.   Bring to a boil under medium heat, stirring occasionally.  Reduce heat to low and allow to simmer for 5 minutes. Remove from heat and allow to cool for 5 minutes.  Stir in the vanilla extract.
4.   Add the quick oats, pumpkin pie spice, cinnamon and salt to a large mixing bowl. Whisk to combine. 
5.   Pour the pumpkin mixture into the oats and mix well
6.   Shape into 2-inch cookies and place on the lined cookie sheet.
Allow to cool completely until set and ENJOY!
