Pink Chocolate-Covered Strawberry Recipe

There’s nothing wrong with classic chocolate-covered strawberries…those indulgent, delicious treats that celebrate love and affection. Like red roses, they are classically elegant, simple, and beautiful. But every now and then there’s an occasion that warrants giving these treats a glittering makeover, like with these pink chocolate-covered strawberries covered in sparkles!

The process is simple and similar to traditional chocolate-dipped strawberries. Start with fresh, whole berries that are clean and thoroughly dry, then dip them in melted pink chocolate chips or candy melts. Then, before the chocolate hardens, you sprinkle them with the edible glitter and coconut. When everything is set, you’re ready to serve them to guests.

Tips for Making Pink Chocolate-Covered Strawberries

1. Make sure your strawberries are completely dry. The chocolate will not adhere properly if your strawberries are not dry.

2. To get the best dipping consistency, you may need to thin your melted chocolate by adding coconut oil or shortening.

3. Have your parchment paper, wax paper, or a silicone mat ready before you start dipping strawberries into the pink chocolate. Once you start dipping, you need to work quickly, and placing the dipped strawberries on a non-stick surface makes them easier to remove once the chocolate has hardened.

4. Add the coconut and edible glitter dust to your chocolate-dipped strawberries while the chocolate is still wet.

5. If you need to drizzle more chocolate over the chocolate-coated strawberries, wait until the first coat has completely hardened, then drizzle the additional chocolate over the top.

How to Melt Chocolate in the Microwave

Making chocolate covered strawberries is even easier if you use the microwave to melt the chocolate instead of using a double boiler on the stovetop.

  1. Place the pink chocolate chips or pink candy melts in a microwave-safe dish.
  2. Melt the chocolate in 20 – 30 second bursts in the microwave, stirring in between each reheating.
  3. If your melted chocolate is not thin enough for dipping, add 1 teaspoon of coconut oil or shortening. Stir it in, then check the consistency of the chocolate. If needed add another teaspoon or two of coconut oil or shortening until it is the desired consistency for dipping berries.

Ingredients:

  • ½ cup pink chocolate chips or pink candy melts
  • 2 cups fresh strawberries, cleaned and fully dried
  • Finely shredded coconut (optional)
  • Edible gold glitter dust (optional)

Directions:

1. Melt the pink chocolate chips in a heat-safe bowl, either over a double boiler or in the microwave in short intervals, stirring until silky smooth.

3. While the chocolate is still soft, sprinkle each berry with shredded coconut and a touch of edible gold glitter for a glamorous finish.

4. Arrange the coated strawberries on parchment paper and let them sit until the chocolate is fully set.

How to Store Leftover Pink Chocolate-Covered Strawberries

Room Temperature: To store your strawberries at room temperature, lightly cover them with foil or plastic wrap. Don’t store them in an airtight container because if they are kept in an airtight container at room temperature, they will decompose faster than if they were just lightly covered.

Refrigerator: To store chocolate covered berries in the refrigerator, lightly cover them with wax paper, then place them in an airtight container.

How Long do Chocolate Covered Strawberries Last?

Chocolate-dipped strawberries are best if eaten the day they are made. They will last 12 – 24 hours at room temperature. However, after 12 hours they may start to leak strawberry juice and won’t look as pretty, but they will still taste delicious.

You can place your chocolate-dipped strawberries in the refrigerator for 2 days, but placing them in the refrigerator will cause condensation to form on the chocolate, so this method isn’t best if you want to serve them to guests.
