I like to roast a chicken on the weekend. It makes for an easy, delicious, and somewhat fancy family dinner. It also provides me with bones to make chicken broth and leftover meat to use in recipes through out the week. I rarely just reheat leftovers, instead I use them as a base to speed up dinner prep. Then I add layers of flavor to create a whole new meal.
I dice leftover chicken and freeze it in 2 cup Pyrex containers. Why 2 cups of chicken? I don’t know, but for some reason that amount works well in a lot of my recipes. Then I pull out the containers of chicken in the morning put them in the refrigerator and they are thawed and ready to use in recipes by dinner time.
Prepping the leftover chicken ahead of time allows me to make healthy leftover chicken recipes in a fraction of the normal time on busy school nights.
