You can use flaxseed meal to replace either oil or eggs in a recipe. Whether you are cooking for someone who needs to avoid these items or you just ran out of one of them and don’t with to run to the store, use the tips below to substitute flaxseed meal for oil and eggs in recipes.
Flaxseed Meal as an Alternative for Oil
You can use flaxseed meal to replace up to 1/4 cup of oil in recipes. You use it in a 3 to 1 ratio. If your recipe calls for 1 tablespoon of oil, you use 3 tablespoons of flaxseed meal. If your recipe calls for 1/4 cup of oil you use 3/4 cup flax meal. If your recipe calls for more than 1/4 cup of oil, you can replace part of it with flaxseed meal and make up the difference with unsweetened applesauce if you don’t want to use oil.
Flaxseed Meal as an Alternative to Egg
You can also use flaxseed meal to replace an egg. Use 1 tablespoon flaxseed meal and 3 tablespoons water. You can replace up to two eggs in a recipe in this manner, but do not use flaxseed meal as an egg replacement if you are already using it as an oil replacement.

I don’t use flax seeds often but I do use them as an egg replacer in gluten free Christmas Cake and puddings as well as scones. I also add bicarbonate of soda and apple cider vinegar to help the baked goods rise.

update…Made blueberry muffins today and used your tip! I substituted 1/3 oil with 1c ground flax meal. Kept the 3 eggs it called for. Delicious! It changed the color of the muffin, but made it look like it was whole wheat flour instead of white flour!

Steady Plodder- I prefer to use it to replace the oil (or at least some of it) when baking. I only use it as an egg substitute if I have run out of eggs.

I prefer chia meal for egg replacement, and flax meal for oil replacement.
Yes, I do both in the same in the same recipe all the time. The chia consistency is closer to egg whites. I even use the chia egg for french toast.

I love using flax seed in baked things. I have also found that adding about 1/4 cup to breads, cakes, biscuits made with whole wheat instead of white flour maked them a bit more moist.
