Corned Beef Tater Tot Casserole

My family loves this corned beef and cabbage recipe except for my youngest child. He tolerates it. I am sure that as he gets older, he will come to love it, but since he doesn’t yet, I decided to come up with a leftover corned beef recipe that I knew would be a hit with him: Corned Beef Tater Tot Casserole! It is amazing how tater tots can transform leftovers into an amazing casserole that even picky children love.

Corned Beef Tater Tot Casserole Recipe

Ingredients:

  • 4 cups chopped cabbage
  • 2 cups diced cooked corned beef
  • 2 cups sliced carrots
  • 1/4 cup diced onions
  • 1 cup corned beef drippings or beef broth
  • 1 tablespoon cornstarch
  • 32-ounce bag of tater tots
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon parsley

Directions:

1. Preheat your oven to 450 degrees and grease a 9×13 casserole dish.

2. Add the cabbage, corned beef, carrots, and onion to the greased casserole dish. Toss to mix.

Add the diced corned beef, cabbage, and carrots to a casserole dish.

3. In a small pot, whisk together the corned beef drippings and corn starch. Cook over a medium heat until it reaches a boil. Lower the heat and simmer until the mixture thickens into a gravy.

4. Drizzle the gravy over the corned beef and vegetables.

5. Place a layer of the frozen tater tots on top of the corned beef and vegetables. Sprinkle the garlic powder, onion powder, and parsley over the tater tots.

6. Place the casserole in the oven and bake for 35 minutes or until the tater tots are crispy and the carrots are al dente.
