This Italian Meatball Tater Tot Casserole recipe is going to be a hit with your family!
The Tater Tot Casserole combines two of my kids’ favorite dishes: Italian meatballs and tater tots. It is made by starting with a layer of Italian meatballs coated in spaghetti sauce, a layer of Parmesan cheese, and finally a layer of tater tots. This is a delicious and easy one-dish meal!
If your kids don’t like peppers, and one of mine doesn’t, you have two options: Leave them out or cut them big enough that your kids can easily remove them.
You can easily double this recipe. Just place the ingredients in a 9x 13 pan. You will not need to make any changes to the cooking time when you double it.
Italian Meatball Tater Tot Casserole Recipe
Yields 4 servings
Ingredients
- 20 frozen Italian meatballs
- 1/2 red bell pepper, seeded and diced (reserve 2 tablespoons for garnish)
- 1/2 green bell pepper, seeded and diced (reserve 2 tablespoons for garnish)
- 1 cup spaghetti sauce
- 1/2 cup parmesan cheese, shredded
- 28 tater tots (this was less than half of a 2-pound bag)
Directions
- Heat oven to 350 degrees.
- Spray casserole dish with nonstick cooking spray.
- Place the meatballs into the casserole dish and bake at 350 for 10 minutes.
- Carefully remove the meatballs from the oven and place on a heat-proof surface. Stir in bell peppers and spaghetti sauce until the meatballs are coated. Even out the meatballs across the bottom of the pan.
- Sprinkle the parmesan cheese over the meatball layer.
- Arrange the tater tots on top of the cheese.
- Return the casserole to the oven to bake at 350 degrees for 45 minutes or until tater tots and meatballs reach an internal temperature of 165 degrees.
- Remove from oven. Garnish with reserved bell peppers and serve hot.
