Like most pies, this Strawberry Cream Pie Recipe takes a little time, but the result is well worth it!

This pie is my daughter’s specialty. We frequently ask her to make it for us. We feel a little less guilty about eating pie when it is filled with fresh strawberries. She adapted her Strawberry Cream Pie from a recipe she found in the June/July 2007 Taste of Home Magazine.
Pie Substitutions
Strawberries: You can make a mixed berry pie by substituting 1 1/2 cups blackberries and 1 1/2 cups raspberries for the 3 cups of strawberries.
Strawberry Gelatin: You can substitute 1/4 cup Blackberry Fusion Jell-0 gelatin for the strawberry gelatin.
Strawberry Cream Pie Recipe
Ingredients:
- graham cracker pie crust (Gluten Free pie crust recipe)
- ¾ cup sugar
- 3 Tablespoons cornstarch
- 1⅓ cups cold water
- ¼ cup strawberry gelatin powder
- 1 – 8oz. pkg. of cream cheese, softened
- ¼ cup powdered sugar
- 2 teaspoons milk
- 1 teaspoon vanilla
- 3 cups strawberries, sliced
- whipped cream (whipped cream recipe)
Directions:
- In a small saucepan combine the sugar, cornstarch, and water until smooth. Bring to a boil. Cook and stir for 2 minutes, or until thickened.
- Remove from heat; stir in gelatin until dissolved.
- Cool to room temperature.
- Refrigerate until slightly thickened.
- In a small bowl, combine cream cheese, powdered sugar, milk, and vanilla. Spread the cream cheese mixture over the pie crust.
- Arrange sliced strawberries on top of the cream cheese mixture.
- Spoon the gelatin mixture over berries.
- Refrigerate until set.
- Serve with whipped cream on top.
