Strawberry Cream Pie

Strawberry Cream Pie Recipe This pie is my daughter’s specialty. We frequently ask her to make it for us. We feel a little less guilty about eating pie when it is filled with fresh strawberries. She adapted her Strawberry Cream Pie from a recipe she found in the June/July 2007 Taste of Home Magazine.

 

Strawberry Cream Pie Recipe

Ingredients:

  • graham cracker pie crust (GF pie crust recipe)
  • ¾ cup sugar
  • 3 Tablespoons cornstarch
  • 1⅓ cups cold water
  • ¼ cup strawberry gelatin powder
  • 1 – 8oz. pkg. of cream cheese, softened
  • ¼ cup powdered sugar
  • 2 teaspoons milk
  • 1 teaspoon vanilla
  • 3 cups strawberries, sliced
  • whipped cream (whipped cream recipe)

Directions:

  1. In a small saucepan combine the sugar, cornstarch, and water until smooth. Bring to a boil. Cook and stir for 2 minutes, or until thickened.
  2. Remove from heat; stir in gelatin until dissolved.
  3.  Cool to room temperature.
  4. Refrigerate until slightly thickened.
  5. In a small bowl, combine cream cheese, powdered sugar, milk, and vanilla. Spread the cream cheese mixture over the pie crust.
  6. Arrange sliced strawberries on top of the cream cheese mixture.
  7. Spoon the gelatin mixture over berries.
  8. Refrigerate until set.
  9. Serve with whipped cream on top.

    My daughter also makes this pie substituting 1 1/2 C blackberries and 1 1/2 C raspberries for the 3 C of strawberries and substituting 1/4 Blackberry Fusion Jell-0 gelatin for the strawberry gelatin.
