Pecan Shortbread Cookies

Pecan Shortbread Cookies- These shortbread cookies are quite simple to make. You will love the sweet, rich flavor and crunchy pecans in this recipe.

One of my favorite cookies from childhood (and still today) was not a chocolate covered, cream filled anything. It was Pecan Sandies cookies- a rich and lightly sweetened cookie with a little crunch from crushed pecans. Maybe it was because they were the “grown ups cookies” and I was supposed to be eating the ones in the jar not the ones hidden on the top of the fridge. Maybe it was that delicious flavor, or just a combination of both that made them so good.

I added pecans to my favorite simple shortbread recipe and found that it was very much like the flavor that I remembered. Only they are better because they are richer, fresher, and you can control the quality of your ingredients. There are only 5 simple and easy to pronounce ingredients in these Pecan Shortbread Cookies.

Pecan Shortbread Cookies

Ingredients:

  • 2 sticks of butter, softened
  • 1 cup brown sugar
  • 4 cups all purpose flour
  • 1 cup finally diced pecans
  • 1 tsp. vanilla

Directions:

  1. Preheat oven to 350.
  2. Line baking sheet with parchment paper or a silpat mat.
  3. Whip softened butter in stand or hand mixer until fluffy.
  4. Mix in brown sugar and vanilla to combine well.
  5. Add flour, 1 cup at a time until thoroughly mixed.
  6. Stir in pecans.Pecan Shortbread Cookies mixing
  7. Flour counter or work surface lightly.
  8. Press dough out to about 1/3″ thickness, you can use a rolling pins or just press with your hands.
  9. Cut out in any shape you desire,  transfer to baking sheet.
  10. Bake for 9-12 minutes until edges are golden brown.
  11. Store in an airtight container.
