Fried Rice is actually better when made with dried out cooked rice. When I plan to make fried rice, I will actually make rice the day before and let it sit in the refrigerator over night and then use it the next day to make fried rice.
I have included a basic fried rice recipe, but you can easily adapt it to the amount of rice you have leftover and whatever ingredients you have on hand.
I don’t have a wok, so I just use a large frying pan.
Fried Rice Recipe
Ingredients:
- 2 green onions chopped
- 2 eggs
- 1 Tablespoon oil for frying eggs
- 2 Tablespoons oil for frying rice
- 4 cups leftover cooked rice
- 2 Tablespoons soy sauce
- 2 cups frozen peas and carrots thawed
- salt and pepper to taste
Directions:
- Beat eggs with salt and pepper.
- Fry onions in oil until soft.
- Add eggs and cook until they are lightly scrambled.
- Remove the eggs and onion from the pan and set aside.
- Add 2 tablespoons oil to the pan, when the oil is hot add the rice and stir fry for 3- 4 minutes.
- Add soy sauce, egg, and vegetables. Mix thoroughly and cook until the vegetables are hot.
