Fried Rice Recipe

Ever wonder what to do with the leftover white rice you get from Chinese take out? It is usually dry and unappetizing. Instead of tossing it out you can add it to soups or casseroles. However, my favorite way to use it is to make Fried Rice!

Fried Rice is actually better when made with dried out cooked rice. When I plan to make fried rice, I will actually make rice the day before and let it sit in the refrigerator over night and then use it the next day to make fried rice.

I have included a basic fried rice recipe, but you can easily adapt it to the amount of rice you have leftover and whatever ingredients you have on hand.

I don’t have a wok, so I just use a large frying pan.

Fried Rice Recipe

Ingredients:

  • 2 green onions chopped
  • 2 eggs
  • 1 Tablespoon oil for frying eggs
  • 2 Tablespoons oil for frying rice
  • 4 cups leftover cooked rice
  • 2 Tablespoons soy sauce
  • 2 cups frozen peas and carrots thawed
  • salt and pepper to taste

Directions:

  1. Beat eggs with salt and pepper.
  2. Fry onions in oil until soft.
  3. Add eggs and cook until they are lightly scrambled.
  4. Remove the eggs and onion from the pan and set aside.
  5.  Add 2 tablespoons oil to the pan, when the oil is hot add the rice and stir fry for 3- 4 minutes.
  6. Add soy sauce, egg, and vegetables. Mix thoroughly and cook until the vegetables are hot.
