Hey hey, the gangs all here – all the flavors of stuffed peppers that you know and love minus the carbs from traditional rice. Peppers,  Italian sausage, tomatoes,  onion, parmesan cheese, and spices make this Cauliflower Rice Stuffed Peppers Recipe taste like traditional stuffed peppers but guilt-free. Give this oven baked stuffed peppers recipe a try on your low-carb menu rotation, you won’t be disappointed.

You can buy raw cauliflower rice in the produce section or the freezer section. However, you can also use one of these 4 ways to rice cauliflower to make your own.

Cauliflower Rice Stuffed Peppers Recipe

Makes 6 servings.

Ingredients:

  • 6 bell peppers, any color
  • 12 ounces Italian sausage
  • 2 large tomatoes, chopped
  • 1 small white onion, chopped
  • 2 cups cauliflower rice
  • ¾ cup Parmesan cheese
  • ¾ cup basil leaves, coarsely chopped or torn
  • Salt and pepper, to taste

Instructions:

Preheat oven to 350 degrees.

Cook Italian sausage in a large skillet over medium heat.

Add in tomatoes, onion, and cauliflower rice.

Cook for 4-5 minutes.

Add in Parmesan cheese and basil leaves.

Turn down to low heat while preparing peppers.

Cut tops off of the peppers and remove seeds.

Stuff peppers with sausage and cauliflower rice filling.

Bake for 30-40 minutes or until peppers can easily be cut with a fork.
