I love my Easy Peppermint Bark, but my husband’s favorite bark is this Cinnamon Bark. It is as easy to make as the peppermint bark and actually comes together faster. You can add any type of nuts to the bark including candied nuts.
It only takes a couple of minutes to melt the white chocolate and the cinnamon chips. I alternate spooning them on to the cookie sheet and then use a spatula to blend them together and spread them evenly over the cookie sheet.
I sprinkle a handful of chopped nuts over the top. I freeze the bark for 15 minutes to set it quickly and then break it into pieces.
This makes a lovely food gift for those who are not crazy about chocolate.
Cinnamon Bark Candy Recipe
Ingredients
- 12 oz. white chocolate pieces
- 1 o oz. bag cinnamon chips
- 1 + cup nuts I used my Chai Spiced Candied Nuts
Instructions
- Cover a cookie sheet with foil.
- Coarsely chop the nuts.
- Melt the white chocolate according to package directions. Once melted stir in 1/2 cup of the nuts.
- Melt the cinnamon chips according to package directions. Once melted stir in 1/2 cup of the nuts.
- Alternate spooning the melted white chocolate and melted cinnamon chips. Then use a spatula to semi blend the two and spread it evenly over the foil.
- I coarsely chop a small handful of nuts and sprinkle them over the top.
- Let sit for 2 hours to firm up or put it in the freezer for 15 minutes. Break into pieces.

I have not found cinnamon chips but have tried making by breaking up red hots using a coffee grinder. Works great with the white chocolate. I have added smaller pieces of the red hots with some of the cinnamon powder residue. Makes great looking bark where you can make pink or leave white depending on how much cinnamon powder residue you add.

I’m going to have to look for those cinnamon chips! Not only is this a beautiful bark, it sounds wonderful! Never having made bark, I wonder if red hots would melt right and work in this. What do you think?

I’m sorry, but I have no idea how red hots melt. I have seen white chocolate bark with unmelted red hots mixed in. If you try red hots, let me know how they work out.

I have only heard of cinnamon chips, but have never been able to find them in stores here in CO. 🙁 I wonder if they could be made at home? I am a cinnamon lover, so it would be lovely to have them.

I was thinking about that as I was making them because I have a great source of white chocolate, but the cinnamon chips have soy, dyes and partially hydrogenated something. I think you could melt white chocolate and then stir in cinnamon. I haven’t done it so I don’t know the measurments, but cinnamon chips have are fairly strong. If I figure out the measurements, I will let you know.

We don’t have the cinnamon chips in the UK yet, but I do bring them back with me from the US. I’ve seen them in grocery stores in New York, Connecticut, San Francisco and LA. I think I may have seen them in Boston too, but I’m not a hundred percent sure. (I hope I’m not the only person who goes into local grocery stores when I travel!)

I always go into grocery stores when on travel. First, I can pick up healthier snack, breakfast, and lunch items at a grocery store. (We usually stay in a suite with small kitchenette, eat dinner out and then I prepare the other meals at the hotel or for picnics. The kids and I can only stand eating out so much, we are odd like that). I also like to buy specialty items from my travels.

Where do you find the cinnamon chips, I don’t think I’ve ever seen them. (Although that could be because I’ve never gone looking for them).

They sell them at most of our local grocery stores during the holidays with the other chips for the same price. They can be ordered from Amazon, but you have to buy 4 at a time. When I was making this I wondered if I couldn’t just buy extra white chocolate (I have a good source without soy) and add cinnamon. If I work out the quantites I will let you know.
