My family fell in love with the fresh salsa at Baja Fresh. They were always trying to get me to make it, but I resisted because I couldn’t match that exact fresh salsa recipe. Then I realized my family didn’t care if it tasted exactly the same as the restaurant’s recipe, they just wanted fresh salsa – meaning raw salsa! That I could do. I used my basic canned salsa recipe – only I cut the recipe and didn’t cook it. My family loved it and I loved how fast it came together!
I try to eat in season, but I just could not wait any longer for the flavors of summer and broke down and bought an imported watermelon and hot house tomatoes. A major portion of the watermelon was consumed immediately after I sliced it open with intentions of making a fruit salad. While the watermelon halves were sitting on the counter, we each dived into it with a fork. No self control what so ever.
I was careful to protect the tomatoes because I was determined to make fresh salsa. There was a minor tomato casualty though. My youngest son squeezed part of a tomato into a garlic press and squeezed. He was really impressed with how far the tomato juice traveled and wanted to replicate the experiment with the other tomatoes. I decided it was a good time for him to play with Legos instead and me to use those tomatoes to make salsa!
Fresh Salsa
Ingredients
- 3 cups fresh diced tomatoes
- 1/2 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup finely chopped fresh cilantro
- 2 tablespoons diced deseeded Anaheim mild or jalapeno (hot) pepper
- 2 cloves garlic minced
- the zest of one lime
- the juice of one lime
- pinch of salt
Instructions
- In a medium bowl, combine tomato, onion, peppers, cilantro, and garlic.
- Add lime zest, lime juice and salt. Mix well.
- Cover and refrigerate for an hour before serving.

When I have “leftover” cilantro, I cut it up and put in an ice cube tray. I fill with lime juice and freeze. That way I have a head start on making another batch of pico de gallo.

Oh yes, I really am getting antsy for summer produce! And I would have no self control whatsoever either if I could get my hands on a watermelon! Love the story about your four year old – it's amazing how far tomato juice does travel!! Your salsa recipe sounds wonderful. Would you believe I picked our first watermelon yesterday? It was a Golden Midget grown on a trellis. I picked the first large tomato today; we've been getting cherry tomatoes for a while. My cilantro has already bolted. Picked a bunch of peppers today, most of them red. Summer has already arrived in deep south Texas!
