My Square Foot Gardens

I have spent most of the spring and summer lamenting the condition and rate of production of my raised bed gardens, so it only seems fair that I should share the positive developments.

I am beginning to harvest raspberries: July2010 231 It won’t be long before I am harvesting blackberries:July2010 109I am regularly picking tomatoes, which are added to salads of lettuces, chard, and radishes from the garden. July2010 242The eggplants are developing nicely. Now I just have to figure out a way to cook them so that my husband and children will eat them. July2010 244I don’t have pictures of the herbs, onions, and peppers growing in the garden, but they are featured in this dip: July2010 201Needless to say, I am thrilled to finally have an opportunity to enjoy the fruits of my labor! Do you grow your own fruits and veggies? Have you had an unusually trying time gardening this year?

    Mine are doing well entirely based on dumb luck rather than through gardening skill. I just happen to have the exact conditions that they like: warm air, warm soil, low water, and compost with lots of manure in it.

    Do you have any tips on growing eggplant? I planted eggplant and they would not grow in the garden, so I moved them to pots because I was told the potting soil would help. It took them a while to grow, but they finally did and they are just now producing. They have maybe 2 eggplants per plant and one is dying.

    I do grow fruits and veggis, and your garden looks beautiful! It has been a trying year in the vegetable department for me as well, but with warmer weather things are taking off and making progress.

    My goodness – your garden is really producing for you. I'd love to have blackberries – they are some of my favorites, and we don't get them much at our farmers markets. Thanks for sharing!

    I have no veggies, but I wish I did! My MIL just made some raspberry jam and gave us a couple of jars–that's as close as I get to freshly grown fruit.

    Thanks for stoppin' by for a Latte'. I'm a little jealous of your eggplant I only got 2 off of our 2 plants this year and it looks like you have several on one. Do you put up any of your produce?     Oh I love growing my own veggies. It's so nice to walk out the backdoor and pick something fresh & juicy. Those eggplants look pretty good, have you tried maybe frying them?

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
