This quick and easy glazed carrots recipe only takes 15 minutes to cook.
This simple recipe for glazed carrots is based on one my cousin shared at a family dinner years ago. My kids enjoy the sweetness of the glazed carrots, it is easy to make, and its mild flavor goes well with just about anything. I love the simple elegance of the dish so it is often on our holiday menu.
This glazed carrots recipe can be doubled or tripled, but don’t double or triple the amount of water that you add. Start with 1/2 cup and add more water as needed. Keep the water to a minimum, so that it is cooked off when the carrots are done.
You can use presliced coin carrots or you can slice your carrots yourself. If you cut them yourself you want them to be between 1/4 and 1/3 inch thick. If you cut the carrots thicker than that it will take longer for them to cook. The carrots can be cut with a crinkle cutter or they can be sliced with a knife. Choose the method that is easiest for you.
If you don’t have parsley or if your kids will not eat anything with green bits, leave it out. The parsley is mostly to make the carrots more attractive. You can use fresh or dried parsley. If you use fresh parsley, double the parsley as it will shrink when it is cooked.
Glazed Carrots Recipe with Parsley
It only takes 5 ingredients and 15 minutes to make this quick and easy glazed carrots recipe.
Ingredients:
- 1 pound sliced carrots
- 1 tablespoon butter
- 1 tablespoon sugar
- 1/2 cup water
- 1 teaspoon dried parsley or 2 teaspoons fresh parsley
Directions:
1. Add the butter to a medium pot. Melt the butter over a low flame. The stir the sugar into the melted butter.
2. Pour a ½ cup of water into the pot and stir until the sugar is completely dissolved.
3. Add sliced carrots and stir to coat. Cook over medium heat.
4. Stir the carrots frequently while cooking off the liquid, approximately 13 minutes. The liquid should be cooked off when the carrots are “al dente”. If the liquid cooks off before the carrots are done, add a tablespoon or two of water.
5. To finish, add the dried parsley. Stir to coat and cook for 1 more minute.
Serve immediately.
