While I enjoy experimenting with gluten-free flours, I also like to keep a couple of flour mixes on hand so that I can easily whip up cookies, muffins, or a cake without having to go through the process of measuring several different types of flours. Both of the below recipes can be used cup for cup in place of regular flour.
Gluten-Free Bread Flour Mix
I use this flour mix for cookies, muffins, and quick breads.
Ingredients:
3 cups brown rice flour
1 cup potato starch flour
1/2 cup tapioca starch
1 1/4 teaspoon xanthan gum
Measure all ingredients into a medium bowl (I use an 8 cup measuring cup, because I can pour with it); mix well. Then sift the ingredients together into a sealable container.
