Easy Gluten-Free Applesauce Cake

Easy Applesauce Cake

1 21 oz. package Pamela’s Classic Vanilla Cake mix
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
3 eggs
2 cups unsweetened applesauce

Preheat oven to 350 degrees. In a large bowl, mix all ingredients thoroughly. Pour into a greased 13 x 9 pan and bake for 30 – 35 minutes or until an inserted toothpick comes out clean. (Increase baking time to 40 – 45 minutes if you use a Bundt pan).

I left my cake plain but you can sprinkle it with powdered sugar or cinnamon sugar. If you make the bundt version it is delicious as well as pretty, drizzled with White Chip Cinnamon Glaze:

White Chip Cinnamon Glaze
3 Tablespoons evaporated milk
1 cup white chocolate chips
1/2 teaspoon cinnamon

In a small sauce pan, heat evaporated milk until it reaches a boil. Remove from heat. Add chips; stir until smooth. Stir in 1/2 teaspoon cinnamon. Drizzle over cake.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
