Salvaging Tortillas

My family enjoys corn tortillas. I like them because they are gluten free and have a longer shelf life than flour tortillas, my husband likes them because they have half the calories of flour tortillas, and my kids like them because “they are flavorful”. Oh, and they are also inexpensive. I can buy a bag of 90 corn tortillas for about $3.00. But when you buy a bag of 90 tortillas, you are bound to get tired of them, even if you really like them.

When the tortillas are getting close to their expiration date, I will start getting creative to avoid having to photograph the tortilla for a Food Waste Picture. I use them to make breakfast burritos, roll them up with turkey and cheese for lunch, and layer them with meat, beans, rice, and cheese to make taco-sagna. Sometimes that is not enough and I still have leftover tortillas. When that happens, I turn them into chips to use in Taco Salad or Caribbean Taco Salad.

Recipe:

Brush the tortillas with olive oil and sprinkle with salt. Place tortillas on a baking sheet. Use a pizza cutter and cut each tortilla into 6 – 8 triangles. Bake at 375 degrees for 8 – 10 minutes, turning pieces after 4 – 5 minutes.

    I have chicken leftovers I take off the bones ;
    next I have a Cambell's cream of chiken soup boiling in a pan;
    I place a layer of tortillas covering one cake pan about 9" square by 2" deth. Then a layer of chiken leftovers; then a cup of the soup and then cover it with chedar cheesse. And start again one layer of tortillas, another of chiken leftovers and so on… make sure you cover the top with cheesse.
    When you have it done put on the oven for about 20 min; just to melt the cheesse.
    It is just good …

    How about that recipe for taco-sagna? I have a feeling that would be a big hit in our house. I used to make a "taco casserole" that may be similar (layers of corn tortillas, spiced ground meat, tomatoes, cheese, sour cream)…

    I'm going to have to try your chips idea:D

    Did you know that you can freeze tortillas too? I know for sure that you can freeze corn (my parents do all the time), but I'm not positive about flour.

    I also like to fry corn tortillas in a bit of oil (don't get them too hard) and put a fried egg on top and salsa and cheese.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.
