I did not have any food waste this week! I wish I could say this was due to meticulous planning, but I have to admit that it is actually quite the reverse.
Since I have been canning , I haven’t felt like cooking dinner. This week I have only cooked three dinners: white chili, vegetable garden minestrone soup, and pasta salad. No fancy recreations with the leftovers. I made favorites when I cooked and then served “encore meals” the next night. It isn’t how I like to do things, but it worked for us and will probably be repeated next fall.
I wanted to share a “something out of nothing” recipe that I found at One Perfect Bite. Mary shared a delightful recipe for pickling watermelon rinds; a treat that I enjoyed when I lived in the south. Her Sweet and Spicy Watermelon Rind Pickles recipe is a great incentive for me to occasionally make use of watermelon rinds rather than tossing them.
