Stop Throwing Out Your Broccoli Stems!

Each week I participate in Food Waste Friday hosted by The Frugal Girl. Monitoring my food waste and taking a picture of what has gone bad each week keeps my accountable and motivates me to remain vigilant in my goal to minimize, if not eliminate, food waste in my household.

This ice-cream started to sublimate. My daughter tried scraping off the crystals and eating the ice-cream beneath, but it didn’t taste or feel right.

I prevented waste by freezing leftover chili in 2 cup Pyrex bowls. They are the perfect size for my teenage son to pull out and reheat for lunch.

I learned a new trick this week by asking the deli clerk how she made broccoli slaw. She told me that they saved the stems after the broccoli florets have been used for something else. Then they peel the stems with a vegetable peeler to get rid of the hard outer skin and then julienne the flesh beneath. So now I can make a delicious salad out of something that would have normally gone into the compost bin. ( I used the dressing for my Nutty Broccoli Salad and added other julienned vegetables).

    That does sound good. Thank goodness organic broccoli is on sale for .99 this week at Whole Foods because my family is going to be eating a lot it this week!

    I don't eat a lot of slaw. I like to peel and julienee the broccoli stems and then sautee them in olive oil and season them with sea salt. Very simple, but so good. I purposely save the stems so that I can prepare them this way. Oooh, broccoli sounds really good right now and I don't have any. 🙁

    When the prices are comparable it does make sense to go with the crowns.

    Our guinea pig helps dispose of some of the broccol stems when we have them.

    Simply reading the title of your post made me think, "I need to be saving those pieces to cook with other veggies when I make puree!"

    I also am eager to buy broccoli crowns when they are 77 cents a pound in lieu of the broccoli with long stems for 68 cents a pound…9 cents? I will gladly pay the extra to not pay for all that stem weight.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
