I am enjoying the cooler weather and the smell of new books, but I am not fond of the crush of activities that begin in September. Many nights I am pulling in the drive way ten minutes after I was planning on serving dinner. So I do a little preplanning and combine it with recipes that I can throw together quickly. Tonight I shared my Orange Spinach Salad with Orange Mustard Vinaigrette recipe at $5 Dinners. It is one of my “Real Fast Food” recipes. A recipe that comes together quickly and easily, but is made of real ingredients rather than prepackaged food.
Repurposing leftover chicken gives me a jump start on dinner and allows me to put together a hearty salad in less than 15 minutes. Here are a few more salads that can be put together quickly by repurposing leftovers:
Taco Salad. Use leftover taco meat and beans to make this salad quickly.
Southwest Steak Dressing with Honey Lime Dressing. You can speed up this recipe by using leftover steak.
Apple Walnut Salad. Leftover bacon makes a tasty addition to this salad.
Strawberry Spinach Salad with Raspberry Vinaigrette. This is a meatless meal that comes together in minutes.

Oh these all look amazing. I cook alot but if I had it my way I would eat a salad almost every night. I just love them and with all these different variations- you have now given me even more reason to eat more salads!

They all look fabulous :). I try to put something together that will stay warm in a crock pot like chili, soup, or stew of some kind on busy nights. That way I can make it before all of the craziness starts and when we come home starving we don’t have to panic. 🙂
