This recipe brings the creamy, spicy, oozy, cheesy, smoky flavors and wraps them all up into one appetizer. You definitely want to add this party classic to your next get-together. The preparation involved in making each of these poppers individually is time well spent, because it is the combination of flavors in every bite that makes them so delectable.

Baking jalapeño poppers in the oven on a wire rack helps avoid “soggy bottoms” because the air can circulate underneath the bacon, and lining your baking sheet with parchment really saves on cleanup time. Wrapping bacon around a slippery jalapeño can be tricky; you can use a toothpick in each popper to help hold everything together. The toothpicks can go right into the oven with the poppers.

Oozing cream cheese is one of the things that makes jalapeño poppers so good, but they won’t be good for long if all the cream cheese oozes out onto the pan when it’s in the oven. Chilling the poppers in the refrigerator for 30 minutes before baking can help.

To get the crispiest bacon, be sure to use regular bacon, not thick-cut slices. Another reason the cream cheese spills out of the popper is when the bacon is too thick to cook quickly.

You can use other types of peppers instead of jalapeños like mini sweet peppers, bell peppers, poblano peppers, or even spicier peppers like habanero peppers.

Prep-Ahead Tips:

You can prep the filling ingredients ahead of time: cook and crumble the bacon, dice the green onions, and shred the cheese. Store them in separate containers in the refrigerator for up to 2 days.

You can assemble the poppers completely the day before, stuffing the jalapeños and wrapping them with bacon. Store them in an airtight container in the refrigerator until you’re ready to bake them. This does two things: cuts down on party-day prep work and chills that cream cheese so it won’t spill out as much during baking. Just take them straight from the fridge and place them on the wire rack over the parchment-lined pan when you’re ready to cook.

Ingredients

  • 12 jalapeño peppers
  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese blend
  • ½ cup cooked and crumbled bacon
  • ¼ cup sliced green onions
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • 12 slices bacon, cut in half

Directions

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and top it with a wire rack. Set it aside.

2. Slice the jalapeños in half lengthwise and remove the seeds and membranes using a spoon.

3. Add the cream cheese, shredded cheese, crumbled bacon, green onions, salt, pepper, garlic powder, and paprika to a bowl and mix until well combined.

4. Use a spoon to fill each jalapeño half with the cream cheese mixture.

5. Take half of a bacon slice and wrap it around a filled jalapeño. Place it onto the wire rack you prepared earlier. Repeat until all of the remaining jalapeños have been wrapped with bacon.

6. Bake for 20-25 minutes, or until the bacon is crispy. For crispier bacon you can broil the poppers at the end on high for 2 minutes.

How to Store Leftovers

Store leftover poppers in an airtight container in the refrigerator for up to 3 days.

How to Freeze Bacon-Wrapped Jalapeño Poppers

You can freeze baked poppers for up to 3 months. Let them cool completely, then place them in a single layer on a parchment-lined baking sheet and freeze until solid (about 1 hour). Transfer the frozen poppers to a freezer-safe container or bag. Label with the date.

Thaw frozen poppers in the refrigerator overnight.

How to Reheat Bacon-Wrapped Jalapeño Poppers

Reheat thawed poppers on a wire rack over a parchment-lined baking sheet at 350 degrees for 10-12 minutes, or until heated through and the bacon crisps up again.

You can also reheat refrigerated leftovers the same way, reducing the time to 5-10 minutes.
