This banana chocolate chip cheesecake recipe is perfect for banana lovers!
I created this Banana Chocolate Chip Cheesecake as part of the Chiquita Cooking Lab Recipe Contest. I was given 3 ingredients to work with: Chiquita Bananas, Cream Cheese, and Chocolate Chips. I was allowed to use other ingredients of my choosing to create a recipe. I decided to keep it simple and go with a cheesecake recipe which would only require a few extra ingredients to make.
While this Banana Chocolate Chip Cheesecake recipe doesn’t require very many ingredients, it does require a little over an hour of baking and at least 4 hours of chilling, so you need to make this recipe ahead of time. The nice thing is since it requires at least 4 hours of chilling is you can make this the day before you want to serve it and let it chill overnight in the refrigerator.
You can make your Banana chocolate Chip Cheesecake in a 9 inch springform pan or a 10 inch springform pan. A 9 inch pan will make a thicker cheesecake. I used a 10 inch pan because we enjoy a shorter cheesecake.
Banana Chocolate Chip Cheesecake Recipe
Ingredients:
- 2 cups crushed vanilla cookie or graham crackers
- 3 tablespoons butter
- 3 – 8 ounce packages of cream cheese
- 1 cup sugar
- 2 medium Chiquita banana
- 2 eggs
- 1 teaspoon vanilla
- 1 cup miniature semi-sweet chocolate chips
Directions:
- Preheat the oven to 325°F and grease a 9-inch springform pan.
- Place cookies in a food processor or blender and blend until the cookies are reduced to fine crumbs. Mix the cookie crumbs and butter; press firmly into the bottom of the springform pan. Bake the crust for 10 minutes.
- Add the cream cheese and sugar to a large bowl. Beat with an electric mixer on medium speed until well blended. Add bananas and vanilla; mix well. Add the eggs, 1 at a time, mixing on low speed after you add each egg until it is just until blended. Stir in the miniature chocolate chips.
- Pour the banana cream cheese mixture over the crust.
- Bake the cheesecake for 55 minutes or until the center is almost set.
- Remove from the oven and place on a cooling rack. Run a knife around the rim of the pan to loosen the cheesecake from the pan. Cool on a wire rack until it is room temperature, then transfer to the refrigerator and chill uncovered for a minimum of 4 hours.
- If desired, top with whip cream, a slice of banana, and additional chocolate chips.
Note: Store the leftover cheesecake in refrigerator.
