I have been harvesting peas a handful at a time. I wanted to use them in our meals, but I needed a recipe that did not require a large amount of peas. Then I remembered a rice and pea recipe that a friend gave me years ago. If I save up my peas I should have enough to make this dish by Saturday.
Brazilian Rice with Green Peas
1 cup converted rice
2 Tablespoons olive oil
1/2 teaspoon curry powder
1/2 onion, finely chopped
2-3 cloves garlic, minced
1/2 cup raw green peas
1 3/4 cup warm water
Brown onion and garlic in olive oil. Add rice and fry rice over high heat for 2 minutes. Stir in warm water. Add curry powder. Stir until the water begins to boil. Add the peas; lower the heat and cover with lid. Simmer for 15 minutes. Serves 4.

This sounds delicious! My family is from Belize, so we all LOVE curry. I don't have any peas in yet, so I'll have to go and buy some.

Sounds similar to a dish I love that I buy frozen at Trader Joes. It has raisins, red pepper, a little onion and peas.

I have substitiuted 2 -3 bay leaves and taken them out before serving. I have also substitued marjoram and basil for the curry depending on the flavor that I am looking for.
