If you haven’t ever tried cola cake, you’re in for a real treat!

Decadent, chocolaty piece of cola cake on a plate, ready to devour.
When I was growing up, we called this Rocky Road Cake, but I discovered that it was also called cola cake when I lived in the south. It is extremely decadent; after looking at the ingredients you will tell me that I have absolutely no room to get up on a soap box on any health related item ever again! However, if you are going to going to indulge, you should indulge in something that is melt in your mouth delicious. 🙂

Cola Cake Recipe

Ingredients:

Cake:

  • 2 cups sugar
  • 2 cups flour or gluten-free cake flour
  • 1 cup cola
  • 1/2 vegetable shortening
  • 1/2 cup butter
  • 4 Tablespoons cocoa
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 1 1/2 cups small marshmallows

Frosting;

  • 1/2 cup butter
  • 3 Tablespoons cocoa
  • 1/3 cup cola
  • 1 cup small marshmallows
  • 1 cup pecans, chopped
  • 1 pound powdered sugar

Directions:

Cake:

  1. In a small bowl, combine sugar and flour; set aside.
  2. In a small sauce pan, add cola, butter, shortening, and cocoa; bring to a boil.
  3. Remove from heat and stir in flour mixture.
  4. Beat in eggs.
  5. Add buttermilk, baking soda, vanilla, and marshmallows; mix well.
  6. Pour into a greased 13×9 pan. Bake at 350 degrees for 40 minutes.
  7. Cool for 15 minutes, then spread with cola frosting. I serve it from the baking dish.

Frosting:

  1. In a medium sauce pan, add butter, cola, and cocoa; bring to a boil.
  2. Turn off heat; add marshmallows and stir until the marshmallows are melted.
  3. Add pecans and sugar; mix well.
  4. Spread on cake.

    Melissa, Brenda is right; this is an easy cake to make.

    I don't know what grocery stores are in your area, but I have found Pepsi Throwback at Safeway and Raley's.

    I've always wanted to try cola cake, but I've never done it. I haven't seen Pepsi Throwback in stores, either, but not for lack of looking!

Ingredients

Cake:

  • 2 cups flour (or gluten-free cake flour)
  • 1 cup cola
  • 1/2 vegetable shortening
  • 1/2 cup butter
