If you haven’t ever tried cola cake, you’re in for a real treat!
When I was growing up, we called this Rocky Road Cake, but I discovered that it was also called cola cake when I lived in the south. It is extremely decadent; after looking at the ingredients you will tell me that I have absolutely no room to get up on a soap box on any health related item ever again! However, if you are going to going to indulge, you should indulge in something that is melt in your mouth delicious. 🙂
Cola Cake Recipe
Ingredients:
Cake:
- 2 cups sugar
- 2 cups flour or gluten-free cake flour
- 1 cup cola
- 1/2 vegetable shortening
- 1/2 cup butter
- 4 Tablespoons cocoa
- 2 eggs
- 1 teaspoon baking soda
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 1 1/2 cups small marshmallows
Frosting;
- 1/2 cup butter
- 3 Tablespoons cocoa
- 1/3 cup cola
- 1 cup small marshmallows
- 1 cup pecans, chopped
- 1 pound powdered sugar
Directions:
Cake:
- In a small bowl, combine sugar and flour; set aside.
- In a small sauce pan, add cola, butter, shortening, and cocoa; bring to a boil.
- Remove from heat and stir in flour mixture.
- Beat in eggs.
- Add buttermilk, baking soda, vanilla, and marshmallows; mix well.
- Pour into a greased 13×9 pan. Bake at 350 degrees for 40 minutes.
- Cool for 15 minutes, then spread with cola frosting. I serve it from the baking dish.
Frosting:
- In a medium sauce pan, add butter, cola, and cocoa; bring to a boil.
- Turn off heat; add marshmallows and stir until the marshmallows are melted.
- Add pecans and sugar; mix well.
- Spread on cake.

I don't know what grocery stores are in your area, but I have found Pepsi Throwback at Safeway and Raley's.
