If you are wondering what you can possibly do to make those Ramen noodle packs healthy check out our Crunchy Cabbage Salad. As I find with most salads I make, this one is easy to adapt to your family tastes. We have often served with grilled Teriyaki Chicken on the side or used shredded chicken and mixed into the salad to be served as a one course meal. Although I prefer freshly shredded cabbage and freshly cooked chicken, this is a last minute weeknight meal that can be quickly thrown together using a rotisserie chicken, bagged pre-shredded cabbage, ramen noodles and an easily made dressing as listed below.
Crunchy Cabbage Salad
Ingredients
- 1 Head Cabbage Prefer Napa but any variety works well
- 5-6 Sliced Green Onions
- 1 3oz packaged Ramen Noodles crushed
Dressing Ingredients:
- ¼ Cup Rice Wine Vinegar
- ¼ Cup Extra Virgin Olive Oil
- ¼ Cup Low Sodium Soy Sauce or Bragg’s Liquid Aminos
- 1 Teaspoon Ginger Powder
- 1 Teaspoon Garlic Powder
- 1 Tablespoon Sesame Seeds
Instructions
- In large bowl mix together shredded cabbage, green onions and ramen noodle pieces.
- In small bowl whisk together vinegar, olive oil, soy, garlic, ginger and sesame seeds.
- Pour dressing over salad and mix thoroughly lightly coating all parts.
- Chill until time to serve.
