This molasses cookie recipe has been handed down from my husband’s great-grandmother. I do not know by whom or when they started being called earthquake cookies.
Ingredients:
2 cups flour*
1 Tablespoon ginger
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teasppon salt
Mix the above dry ingredients together.
1 egg
1/2 cup molasses (I recommend wearing a clothes pin on your nose when pouring molasses)
3/4 cup shortening
1 cup sugar
extra sugar
Cream shortening and sugar together. Add egg and molasses; mix well. Add dry ingredients. The batter will be stiff.
Form into balls about the size of a walnut. Roll in extra sugar. Baked on a greased cookie sheet at 350 degrees for about 15 minutes.
* you can use a gluten free all-purpose flour. If you make your own mix of gluten free flours be sure to add 1 teaspoon of xanthan gum.

Nicole- If I take a picture with my digital camera it goes up immediately. If I accidentally take the pictureon my old camera, it can wait for months waiting to be developed, scanned, and uploaded!

I had a friend give me the earthquake cake recipe. It is very good! The first time I made it I did something wrong, so now my family calls it volcano cake! 🙂

We have had an "earthquake cake" recipe passed down in our family… it is kind of like a German chocolate cake…with pecans, coconut, cream cheese and powdered sugar. I wonder how these recipes got their names…;) Nevertheless, your recipe sounds awfully delicious. I will certainly give it a whirl!

These look yummy! I was laughing at your suggestion of putting a clothespin on your nose to pour the molasses- I actually don't mind the smell too much.
