Easy Buckeye Fudge Recipe

I don’t know about you but I love pretty much any combination of peanut butter and chocolate. Little round Buckeyes have been a staple of my candy making for years but I really love this Easy Buckeye Fudge Recipe. Easy to slice and serve without the mess of dipping it is a great way to enjoy an old favorite in a new way.

Easy Buckeye Fudge Recipe

This Easy Buckeye Fudge Recipe puts a new spin on one of the most popular peanut butter and chocolate homemade candies.

Ingredients:

  • 1 1/2 cups creamy peanut butter
  • 1 cup (2 sticks) plus 2T butter, divided
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 11 oz bag semi-sweet chocolate chips
  • 2/3 cup sweetened condensed milk

Directions:

1. Line an 11 x 7 pan with parchment paper and set aside.

2. In a medium microwave-safe bowl, add the peanut butter, 2 sticks of butter, powdered sugar and vanilla extract. Microwave on HIGH in 35-second intervals, stirring after each interval, until completely melted and smooth. Remove from microwave.

3. Pour the melted peanut butter mixture into the parchment lined pan. Spread out evenly with a spatula.

4. Add the chocolate chips, sweetened condensed milk and 2 tablespoons of butter to a medium microwave-safe bowl. Microwave on HIGH in 35-second intervals, stirring after each interval, until completely melted and smooth. Remove from microwave. 

5. Pour the melted chocolate on top of the peanut butter layer and spread out evenly with a spatula.

6. Chill for 4 hours to allow the fudge to set.

5. Cut into a square before serving and ENJOY!!

* NOTE: To keep your buckeye fudge the freshest, cover with wax paper, foil or plastic wrap and store in a cool, dry place. I prefer to store mine in the refrigerator but you can keep it at room temperature, also. In addition, this fudge freezes really well (for up to 3 months).
