Menu Plan – Week of July 20th

We have been eating from the pantry, freezer, and garden for the last couple of weeks. I realized that I had meat in the freezer that was approaching the four month mark and pantry staples that were approaching the six month mark.  So it was time to use those items or risk having to toss them.  They figure in this menu plan – lots of pork, rice, etc.

Menu Plan – Week of July 20th

Monday – Garlic Pasta with Vegetables and Garden Salad

 

Tuesday – Pork Roast, Garlic Green Beans, Brown Rice

 

Wednesday -Use some of the leftover roast to make Pulled Pork Sandwiches, Sauteed Summer Squash and Zucchini, Garden Salad

 

Thursday – Use 1/2 pound of leftover pork roast, and leftover rice to make White Chili , Gluten Free Corn Bread, Garden Salad

 

Friday – YOYO Dinner

 

Saturday – Barbecue Steak, Grilled Potatoes, Grilled Corn, and Garden Salad

 

Sunday – Use leftover steak in Dirty Rice and Garden Salad

    I love the YOYO idea. I do that once in a while I just never had a name for it.

    YOYO means You are On Your Own. I schedule them when I know the leftovers will have started to accumulate and when I won't have a lot of time to cook.

    That is a wonderful way to honor your father! It is also how my husband and I choose to honor our grandfathers. It is a way for their legacy of serving our country to live on.

    Sounds like some great meals. I'll be right over! By the way, I checked out your charity and will be sending them a check this month. Sounds like a great charity and I usually give to some type of Veteran's Charity several times a year in honor of my father.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
