When you love a velvety, decadent Alfredo but you want to lower carbs, chicken Alfredo without pasta is the answer. This keto-friendly loaded chicken Alfredo bake delivers all the creaminess you’re craving. It has broccoli, so you sneak in a serving of cruciferous veggies, but it’s topped with bacon and cheese, so it still tastes indulgent!

The cooking starts by making the creamy Alfredo sauce on the stove. Then you mix the sauce with a package of thawed broccoli, more cheese, spices, green onion, and cut-up chicken. Finally, you spread everything into a 9×13 baking dish, cover it, and pop it into a pre-heated oven. An hour later, you have six servings of keto comfort food.

Keto Chicken Alfredo Casserole Substitutions

Alfredo Sauce: The homemade Alfredo sauce recipe included below is easy and delicious, but in a pinch you could substitute a store-bought jar of sauce.

Cubed Chicken: You can substitute boneless chicken thighs for the chicken breasts.

Prep-Ahead Tips

You’ll want to make the Alfredo sauce early enough that is has time to cool before using it in the recipe.

Thaw the broccoli by placing it in a fine-mesh strainer and run cold water over it for a few minutes. Let the excess water drain, then use it in the recipe.

Reserve a couple slices of bacon from breakfast to use on top of this casserole.

Keto Chicken Alfredo Casserole Recipe

Decadent and creamy, this keto-friendly chicken Alfredo casserole lowers the carbs without lowering the satisfaction level. This is a loaded chicken Alfredo bake that uses a package of frozen broccoli, cubed chicken breasts, and three kinds of cheese.

Recipe for Alfredo Sauce

Ingredients:

  • 3 tablespoons butter
  • 2 cloves garlic
  • 2 cups heavy cream
  • 5 ounces Parmesan, grated
  • 1/8 teaspoon ground nutmeg
  • salt & pepper to taste

Directions:

1. Melt 3 tablespoons of butter in a pan. Add the garlic to the pan and cook for 1 minute.
2. Pour the heavy cream into the pan and bring it to a simmer over medium heat. Stir often so the cream doesn’t scorch in the bottom of the pan.
3. Stir in the Parmesan, nutmeg, salt and pepper, and continue to cook until it thickens – approximately 7-9 minutes. The sauce should be thick enough to coat the back of your spoon.
4. Remove the pan from the heat and allow sauce to cool before using it for the recipe.

Chicken Alfredo Casserole Ingredients:

  • 1 (12-ounce) package of frozen broccoli (thawed)
  • 2 cups Alfredo sauce (see the sauce recipe below)
  • 10 ounces whipped cream cheese
  • 1 cup shredded Cheddar cheese
  • 1 bunch green onions (chopped)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley
  • 5-6 chicken breasts (cubed)
  • cooked chopped bacon (for topping)
  • shredded Cheddar cheese (for topping)
  • chopped green onions (for topping)
  • foil

Tools:

  • 9″ x 13″ casserole dish
  • foil

Instructions:

1. Start by mixing the broccoli, Alfredo, cream cheese, shredded cheese, green onions, and spices together, until well combined.

3. Add the cubed chicken to the broccoli mixture and mix the ingredients until they are well combined.

Thaw overnight in the refrigerator.

How to Reheat Keto Chicken Alfredo Casserole

Reheat individual portions in the microwave for 1-2 minutes, stirring halfway through. For larger portions, place in a skillet or oven-safe pan and bake at 350 degrees for 10 – 15 minutes or until heated through.
