Having some quick and easy recipes in your recipe box makes it much easier to eat healthy and nutritious meals even on busy night. In the Savings.com Meal Planning Workshops, emphasis is placed on having recipes for at least five fast dinner recipes so you can schedule them on the days that you know will be hectic.
I recently had an opportunity to participate in fun Fast Five Meals Recipe Swap with my fellow Savings.com DealPros. We each sent in one of our favorite quick and easy recipes and then Savings.com sent us a box which contained a recipe, a few goodies, and a $20.00 gift card to purchase the ingredients to make the recipe.
The recipe I received in my box was for Linguine with Clam Sauce from Dana of The Coupon Challenge. I was excited that the recipe include clams because my seafood repertoire is pretty limited and consists primarily of broiling or baking fish. Everyone enjoyed the recipe so I will be adding this fast and easy seafood recipe to my Fast Five Meals line up!
Linguini and Clam Sauce
Ingredients
- 16 oz. Linguine I used GF Fettuccine
- 1 can of chopped clams
- 1 28 oz. can diced tomatoes
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 teaspoon minced garlic
- a pinch of red pepper flakes
- salt and pepper to taste
- 2 teaspoons Italian Seasoning mix optional - this was my adaptation
Instructions
- Cook linguine according to package directions.
- In a large skillet, heat oil and add onion, cook until onions are translucent.
- Add garlic and red pepper to the onion and cook for 30 seconds.
- Add tomatoes and Italian seasoning mix to the onion mixture. Reduce heat to medium-low and simmer for 15 - 20 minutes. (If the liquid starts to cook off, lower the temperature and cover with a lid).
- Add clams and salt and pepper to taste and cook until clams are heated through, approximately 5 minutes.
- Toss the clam sauce with the pasta and serve immediately.

easy favorite recipe: tomato sauce – cook sausage, saute onions & garlic, add can crushed tomatoes, paste, can sauce, add basil, fennel seed, italian seasoning, salt & pepper. simmer, and serve with pasta.
