This Mixed Berry Pie Recipe a delicious way to celebrate Pi Day (March 14, or 3/14), or any day you want to make a tasty fruit-filled pie.
We have a few math geeks living at our house. And when I say math geeks, I mean serious math geeks. So geeky that one member of my household does math proofs…for fun. So Pi Day is always celebrated. Usually with a pie in our pi plate.
Though some years it has been celebrated with a Pi pie:

Any pie recipe will do, but my daughter is particularly fond of mixed berry pie, since she can arrange the berries to form the pi symbol. She works as a math tutor and says pi day is her favorite day to go to work, since it is always celebrated properly.
Mixed Berry Pie Substitutions:
Berries: We’ve used a mix of blackberries and raspberries, but you can use any combination of berries you wish including blueberries and diced or sliced strawberries.
Jello Mix: We’ve used Blackberry Fusion Jello Mix, but you can use any berry flavored gelatin including strawberry and raspberry. Match the gelatin flavor with the type of berries you use.
Pie Crust: For this mixed berry pie we decided to make the crust with crushed granola bars instead of graham crackers. Granola bars are just as easy to use as cookie or graham crackers and create a very flavorful crust! The pie crust can easily be made gluten-free by using gluten-free granola bars in the pie crust. You can use a traditional pie crust recipe if you pre-bake it or a graham cracker pie crust if you wish.
Mixed Berry Pie Recipe With Granola Crust
Ingredients:
Pie Crust:
- 9 ounces crunchy granola bars (we used gf honey flavored)
- 4 tablespoons butter, melted
Pie Filling:
- ¾ cup sugar
- 3 Tablespoons cornstarch
- 1⅓ cups cold water
- ¼ cup blackberry fusion gelatin powder
- 8 ounce package of cream cheese, softened
- ¼ cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla
- 3 cups berries
Directions:
Pie Crust Directions:
- Crush granola bars in a food processor or in a bowl with a potato masher
- Add melted butter to crushed granola and mix well.
- Press into greased 9 inch pie dish. Bake at 350 degrees for 5 minutes.
Pie Filling Directions:
- In a small saucepan combine the sugar, cornstarch, and water until smooth. Bring to a boil.
- Cook and stir for 2 minutes, or until thickened.
- Remove from heat; stir in gelatin until dissolved.
- Cool to room temperature. Refrigerate until slightly thickened.
- In a small bowl, combine cream cheese, powdered sugar, milk, and vanilla.
- Spread the cream cheese mixture over the pie crust.
- Arrange berries on top of the cream cheese mixture.
- Spoon or pour the gelatin mixture over berries.
- Refrigerate until set.

How to Store Leftover Mixed Berry Pie:
Cover the pie with plastic wrap or foil and store the pie in the refrigerator for up to 3 days.

This looks awesome! We, too, are Pi geeks. If you want a laugh, my brother was on the news the other day for Pi. He has a ton of numbers memorized of Pi and he just recently re-did his kitchen and made his backsplash with digits of Pi.
